Grain Free Granola Recipe
I love granola, but avoid most store bought variations because of how much sugar and other funky stuff they sneak in there. I feel similarly about nut milks and can't stand when you turn over a label and there are 10+ ingredients for something that should have 2-3. I have come to truly love the ritual of making my own almond milk and adapted a simple recipe I found to make delicious clean granola from the leftover almond milk pulp.
a la Mere Grain Free Granola
Ingredients: *adapted from this recipe
1 cup almond milk pulp
1/2 cup chopped nuts (I use walnuts or pecans)
1/2 cup pumpkin seeds
1/4 cup hemp seed
1/4 cup flax seeds
1 cup coconut flakes
2 tbsp honey or maple syrup
3 tbsp coconut oil or nut/seed butter
2 tsp cinnamon
1/2 tsp Himalayan pink salt
1/2 cup freeze dried fruit (I use strawberries or raspberries)
Directions:
Preheat the oven to 350F.
Combine all the ingredients in a mixing bowl ensuring everything is evenly coated.
Spread on a baking sheet lined with parchment paper. *I like to sprinkle a little more cinnamon on top here
Bake for 12 minutes. Stir. Then bake for another 12-15 minutes.
Remove from the oven and cool completely. *It will get cruncher as it cools.
Mix in freeze dried berries once cooled.
Store in an airtight container in the fridge.

*Makes roughly 5 & 1/2 cups of granola.
I use it a crunchy topping for my smoothies, but it would be great with yogurt, as a cereal placement, or alone as a sweet snack.
